This salad is packed with fresh veggies, healthy fats, and a creamy dressing that’s a lighter alternative to traditional creamy dressings. If you add protein like grilled chicken, the salad becomes a filling, balanced meal.
Green Goddess Fiesta Salad
Equipment
- Blender or Immersion Blender
Ingredients
For the Salad:
- 2 Romaine lettuce hearts
- grape tomatoes cut into quarters
- 1 can corn
- 1 can black beans
- 1 lb chicken I used frozen so my cook time is a little longer
- 1 cup reduced fat shredded mexican blend cheese
- scallions
- red onion or pickled red onion whichever you prefer
- tortilla strips optional
For the Green Goddess Dressing:
- 1 avocado
- 1 container plain greek yogurt
- 1/4 cup mayo
- Juice of 1 lime
- 1 clove garlic
- 1 bunch of cilantro
- 1/2 jalapeno remove seeds
- 2-3 scallions
- water to thin
- salt to taste
Instructions
Prepare the Chicken:
- Season chicken with salt, garlic powder, cumin and onion powder.
- Airfry at 375 until cooked fully through (165° internal temp).
- Cool and cut into bite size pieces.
Prep your Salad
- Chop veggies.Drain corn and beans.
- Add lettuce, then veggies, corn, beans, and cheese to bowl. (If adding tortilla strips store separate to avoid sogginess)
Make the Dressing
- Blend all the ingredients, add water to thin. Add salt to taste. Place in airtight container and store in the fridge for up to a week!
