Ingredients
For the Salad:

Romaine lettuce hearts
grape tomatoes
cut into quarters

corn

black beans

chicken
I used frozen so my cook time is a little longer

cup
reduced fat shredded mexican blend cheese
scallions
red onion or pickled red onion
whichever you prefer
tortilla strips
optional
For the Green Goddess Dressing:
1
avocado
1
container
plain greek yogurt
1/4
cup
mayo
Juice of 1 lime
1
clove
garlic
1
bunch of cilantro
1/2
jalapeno
remove seeds
2-3
scallions
water
to thin
salt
to taste
Instructions
Prepare the Chicken:
Season chicken with salt, garlic powder, cumin and onion powder.
Airfry at 375 until cooked fully through (165° internal temp).
Cool and cut into bite size pieces.
Prep your Salad
Chop veggies.
Drain corn and beans.
Add lettuce, then veggies, corn, beans, and cheese to bowl. (If adding tortilla strips store separate to avoid sogginess)
Make the Dressing
Blend all the ingredients, add water to thin. Add salt to taste.
Place in airtight container and store in the fridge for up to a week!
