Green Goddess Fiesta Salad

Ingredients
  

For the Salad:

  • 2 Romaine lettuce hearts
  • grape tomatoes cut into quarters
  • 1 can corn
  • 1 can black beans
  • 1 lb chicken I used frozen so my cook time is a little longer
  • 1 cup reduced fat shredded mexican blend cheese
  • scallions
  • red onion or pickled red onion whichever you prefer
  • tortilla strips optional

For the Green Goddess Dressing:

  • 1 avocado
  • 1 container plain greek yogurt
  • 1/4 cup mayo
  • Juice of 1 lime
  • 1 clove garlic
  • 1 bunch of cilantro
  • 1/2 jalapeno remove seeds
  • 2-3 scallions
  • water to thin
  • salt to taste

Instructions
 

Prepare the Chicken:

  • Season chicken with salt, garlic powder, cumin and onion powder.
  • Airfry at 375 until cooked fully through (165° internal temp).
  • Cool and cut into bite size pieces.

Prep your Salad

  • Chop veggies.
    Drain corn and beans.
  • Add lettuce, then veggies, corn, beans, and cheese to bowl. (If adding tortilla strips store separate to avoid sogginess)

Make the Dressing

  • Blend all the ingredients, add water to thin. Add salt to taste.
    Place in airtight container and store in the fridge for up to a week!
