Beyond Burger Salad

This burger salad is a deconstructed burger in a bowl, combining all the classic flavors of a juicy cheeseburger with a lighter, low-carb twist. Instead of a bun, this salad is loaded with crisp lettuce, a burger patty, juicy tomatoes, pickles, onions, and shredded cheese. It’s topped with a creamy special sauce inspired by burger joints and you get all the deliciousness of a burger while keeping it fresh, crunchy, and a bit healthier! ??

Ingredients
  

For the Salad

  • 1 Beyond Burger Patty
  • 2 c romaine lettuce
  • 1/4 c diced tomato
  • 1/8 c chopped red onion
  • 1/4 c low fat shredded cheese

For the Dressing

  • 1 tbsp light mayo
  • 1 tbsp ketchup
  • 1 tsp mustard
  • 2 tbsp Bolthouse Farms Ranch
  • 1 tbsp pickle juice
  • 1 tbsp chopped pickle
  • water (if needed) to thin

Instructions
 

  • Preheat Airfryer to 390. Cook Beyond Burger 7.5 mins each side or until crispy and browned.
  • Wash all veggies and chop.
  • Place lettuce, then tomato and onion in a bowl. Add cheese.
  • Allow burger patty a minute to cool and then slice and lay onto salad.
  • Mix all dressing ingredients in a small bowl. Add water to thin until you have a salad dressing consistency you like.
  • Add dressing to salad and enjoy!

Notes

Make it Vegan! Add plant based cheese, vegan mayo and ranch.
